BBQ Chicken Thighs

We speed up this cookout classic by using boneless chicken thighs and a hot grill pan. You’ll be amazed out how quickly a homemade barbecue sauce comes together; it’s great for making just what you need (no half-empty bottle lurking in your fridge) with less added sugar and salt than store-bought

Ingredients
1 cup unsalted ketchup 2 1/2 tablespoons light brown sugar 1 tablespoon apple cider vinegar 1/2 teaspoon black pepper 1/2 teaspoon dry mustard 1/4 teaspoon onion powder 1/4 teaspoon garlic powder 1 1/2 pounds skinless, boneless chicken thighs (about 8) Cooking spray 1/2 teaspoon kosher salt 2 cups refrigerated prepared mashed potatoes (such as Simply Potatoes)

How to Make It
Step 1
Combine first 7 ingredients in a bowl, stirring with a whisk. Place 1/2 cup ketchup mixture in a small bowl. Add chicken to remaining ketchup mixture; toss. Let stand 5 minutes.

Step 2
Heat a grill pan over medium-high. Coat pan with cooking spray. Remove chicken from ketchup mixture; discard ketchup mixture. Add chicken to pan; grill 5 minutes on each side or until done, brushing occasionally with reserved 1/2 cup ketchup mixture. Remove chicken from pan; sprinkle with salt.

Step 3
Heat potatoes according to package directions. Serve with chicken.
