The spicy dressing for the salad works well with all kinds of salads, including a green or salmon salad.

Ingredients
100g/3½oz roasted chicken breast, roughly chopped
1 celery stick, thinly sliced
1 spring onion, thinly sliced
25g/1oz red pepper, thinly sliced
25g/1oz fennel, thinly sliced
For the dressing
1 tbsp sweet chilli sauce
2 tsp white wine vinegar
Method
To make the dressing, whisk together all the ingredients.
In a small shallow bowl, toss together all the salad ingredients.
Pour over the dressing and serve.
